An epic dip worthy of Super Bowl legend status! Our favorite for large crowds on cold days – or any day! Make in a crock pot or a deep skillet on the grill.
This legendary dip combines three types of meat, multiple cheeses, and a secret ingredient for deep, complex flavors that will have guests begging for the recipe.
INGREDIENTS:
* 1 pound hot Italian sausage, crumbled
* 8 slices thick-cut bacon, diced
* 1 pound ground chorizo
* 2 15oz cans fire-roasted corn, drained
* 1 large onion, diced
* 4 poblano peppers, roasted and diced
* 4 jalapeños, seeded and finely diced
* 6 cloves garlic, minced
* 1 8oz block cream cheese, cubed
* 2 cups sharp cheddar, shredded
* 2 cups Monterey Jack, shredded
* 1 cup Mexican crema or sour cream
* 1 12oz bottle Mexican lager beer
* 1 4oz can diced green chiles
* 2 tablespoons chipotle in adobo sauce (sauce only)
* 1 tablespoon smoked paprika
* 1 lime, juiced
* 1 bunch cilantro, chopped
For Topping:
* Crumbled queso fresco
* Extra crispy bacon bits
* Sliced green onions
* Extra cilantro
* Diced avocado
* Lime wedges
INSTRUCTIONS:
1. In a large skillet, brown Italian sausage and chorizo together. Drain and set aside.
2. In same skillet, cook diced bacon until crispy. Remove with slotted spoon, leaving grease.
3. In bacon grease, sauté onion, poblanos, and jalapeños until softened. Add garlic, cook 1 minute more.
4. Transfer to large crockpot or stock pot. Add meats, corn, all cheeses, crema, beer, green chiles, chipotle sauce, and paprika.
5. Cook on low 3-4 hours in crockpot (or simmer on grill/stovetop 1-2 hours), stirring occasionally.
6. Just before serving, stir in lime juice and cilantro.
7. Top with generous amounts of queso fresco, crispy bacon, green onions, extra cilantro, and diced avocado. Serve with lime wedges.
TIPS:
– For extra depth, roast the corn before adding
– Can substitute Mexican chorizo for soyrizo for a lighter version
– Make it spicier by leaving jalapeño seeds in or adding cayenne
– The beer can be substituted with chicken broth, but the beer adds amazing depth
– Perfect for making ahead – flavors develop overnight
– Leftovers make amazing nachos or quesadilla filling
– Serve with sturdy tortilla chips, Fritos, or grilled bread
– Can be kept warm in crockpot during entire game
